This is a savory and sweet sandwich. Great as finger food and will be loved by adults and children alike.
Kiwi fruit is rich in Vitamin C. It has Vitamin A,D, E, K and has minerals like Potassium, Copper and Magnesium – all essentials for the human body. It acts as an antioxidant. It controls Blood Sugar, treats Asthma, and helps in digestion.
Ingredients for spread
Mayonnaise – 2 tbsp
Fresh Cream (Malai) – 1 tbsp
Lemon Juice – ¾ tsp
Lemon Zest (Grated Lemon Skin) – ½ tsp
Pepper Powder – 1 pinch
Other Ingredients
Brown Bread Slices – 4
Red and Yellow Capsicum – ½ each (Cut into pieces)
Kiwi – 1 sliced
Olives – 3 sliced
Chilli Flakes – ½ pinch (Optional)
Pepper Powder – ¼ tsp
Salt to taste
Preparation:
In a bowl, mix all the ingredients in the “Ingredients for Spread” column, mix well and keep aside.
Sauté the Capsicum cubes with ½ tsp of butter and a pinch of salt. Keep it crunchy. Toast the bread slices with butter.
Apply the spread liberally on two slices of toasted bread. Sprinkle Chilli Flakes over it. Arrange the Capsicum Cubes over it.
Then layer with kiwi Slices and sliced olives. Sprinkle salt and pepper powder. Cover it with another empty slice of bread.
Cut the sandwich diagonally.
Goes great with tea or coffee! Can also be had for breakfast or a light dinner 🙂
Note: If this sandwich is prepared for kids, decrease the amount of chili flakes as per taste.
