This is a simple and easy egg roast and can be made in real quick time. We need the regular Indian Masala and one can adjust the quantity to suit the taste.
Ingredients:
Hard Boiled Eggs – 4
Coconut Oil – 2 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Curry Leaves – ½ tsp
Onion – 2 (sliced)
Green Chillies – 2 (sliced)
Red Chilli Powder – ¾ tsp
Black Pepper Powder – ½ tsp
Cumin Seed Powder – ½ tsp
Turmeric Powder – 1/8 tsp
Salt – to suit one’s taste
Method:
Heat the Oil in a pan. Add the Mustard Seeds and allow them to crackle. Add Cumin Seeds. Add Curry Leaves and the sliced Onion. Sauté the Onion translucent. Add Salt, Green Chillies. Sauté for 2 more minutes in low to medium flame.
Add Chilli Powder, Pepper Powder, Cumin Seed Powder and Turmeric Powder. Roast them till the Masala smell goes away.
Make some slits on the hard boiled Eggs with a sharp knife. Add the Eggs to the roasted masala. Sprinkle few spoons of water. Cover the pan with a lid and simmer for 2 to 3 minutes in low to medium flame.
Transfer to a serving bowl.
