Jackfruit is available abundantly in the Kerala Region and so, we can learn and cook many recipe from this region which make use of this fruit. Jackfruit Payasam is one such dish which has a unique flavor. It is a great treat to Jackfruit lovers like me :). It is definitely a healthy dish also. Jackfruit is a rich source of vitamins, carbohydrates, fiber, protein etc. Even though it is a calorie booster, it does not contain saturated fats. The Jaggery, which we will use in this dish, has antioxidants and minerals. And Coconut milk is also good for health. In short, this dish is a very tasty and healthy at the same time!
Ingredients:
Ripe Jackfruit Bulbs – 8 to 10
Jaggery – ½ cup
Water – ¼ cup
Ghee – 2 tbsp
Cashew Nuts – 10 Nos
Coconut Milk – 1 to 1 ¼ cup
Cardamom Powder – 1 pinch
Salt – a very small pinch
Method:
Remove the Seeds from the Jackfruit Bulb along with skin and discard.
Blend the Jackfruit and make a puree of it – little chunky.
Melt the Ghee and roast the Cashew Nuts in them. Transfer to a small plate.
In the same pan, add the Jaggery and ¼ cup of water.
Let the Jaggery melt. If you find any impurities from the Jaggery floating, filter it to remove the impurities and then continue with the process.
When the Jaggery syrup attains a string consistency, add the Jackfruit Puree to it.
Continue cooking for 4 to 5 minutes in medium flame.
When the mixture thickens, add the Coconut Milk powder and the Cardamom Powder.
Keep stirring at intervals. Let it come to a boil.
Once it starts boiling, simmer for 3 to 4 minutes in low to medium flame stirring occasionally. Switch off the flame.
The tasty Jackfruit Payasam is ready. Garnish it with the Cashew Nuts.
Note:
You can use Coconut Milk Powder to prepare the Coconut Milk. Follow the instructions given by the manufacturer of the Powder to make the milk. You can also use fresh homemade coconut milk as well.
