Guava is a nutritious bread which can be eaten daily. When it is ripe and stored in a room, the whole room gets filled with its good aroma. The Guava Jelly or Jam is a very tasty spread for Sandwiches, Roti and Parotha. I do not use any preservative in making this jam. For making this jam, you need fully ripened soft guava. I used white fleshy Guava, You can use the other Red Guava also.
Ingredients:
Fully Ripened Soft Guavas – 6 (600 Gms approximately)
Sugar – 2 ¼ cups
Lemon Juice – 3 tbsp
Salt – a small pinch
Water – 4 cups
Food Color – few drops
Method
Wash the Guavas and cut them into small pieces.
Take the pieces in a pan and add 4 cups of water.
Boil them for 10 to 15 minutes in medium flame or till the Guava becomes very soft and mushy.
Mash it nicely with a blender.
Strain and extract all the pulp.
Discard the seeds.
Measure the Guava pulp. Take the Guava Pulp in a pan. Add ¾ cup of Sugar for every cup of the Guava pulp.
Add food color. Mix well.
Cook this mixture in low to medium flame. Stir continuously with a ladle so that no lump is formed. It starts bubbling in 15 to 20 minutes.
Add lemon juice.
Drop ¼ tsp of this Jam into ice old water. If it does not dissolve, the jam has reached the required consistency.
Allow the Jam to cool down. When it attains room temperature, transfer it to a sterilized bottle and store in the refrigerator.
