Senai Podimas/Suran ki Sabzi is a very simple and tasty dish from the southern part of India.
Ingredients
Elephant Yam (Senai Kizhanku) – 250 Gms
Water – 2 tbsp
Tamarind – small goose berry sized ball
Oil – 2 tbsp
Mustard Seed – ½ tsp
Urad Dal – 1 tsp
Green Chilli – 3 (finely chopped)
Curry Leaves – from 1 twig
Garlic (Crushed) – 4 pods
Onion – 1 (finely chopped)
Turmeric Powder – 1 tsp
Salt to taste
Grated Coconut – ¼ cup
Method
Soak Tamarind in a small bowl of water.
Apply Oil in your hands and peel off the skin off the Elephant Yam.
Grate this Yam in a grater with holes. Transfer the grated Yam to the Tamarind water. This process will reduce the itching sensation from the Yam. Leave for 10 to 15 minutes. Drain the water, Rinse the Yam in running water and keep aside.
Heat the Oil in pan. Add Mustard and Urad Dal. When they start spluttering, add the Onion, Green Chilli, and Curry Leaves and crushed Garlic. Sauté till the Onion become translucent.
Add the grated Yam, Salt and Turmeric Powder. Mix well. Cover and simmer in low or medium flame for 4 to 5 minutes till the Yam is completely cooked.
Add the grated Coconut.
Stir for a couple of minutes.
Done!
Transfer to a serving bowl.
Serve with Rice.
Note:
Adjust the spiciness by adjusting the quantity of Green Chillies.
