Egg Vegetable Bread Upma

Bread Upma with vegetables and egg is a great breakfast recipe – very easy to make. Kids would also love it

Ingredients

Bread Slices – 6

Mixed Vegetables – 1 cup (Potato, Green Pea (Green Peas), French Beans)

Butter – 1 tsp

Cumin Seed/ Jeera -1 tsp

Finely Chopped Ginger – 1 tsp

Finely Chopped Garlic – 1 tsp

Green Chilli – 1 (Finely Chopped)

Onion Big – 1 (Finely Chopped)

Tomato – 1 (Deseeded and finely chopped)

Cilantro (Dhania) – ¼ cup (finely chopped)

Egg – 2

Black Pepper Powder – ¼ tsp

Lemon Juice – 1 tsp

Chilli Powder – ¾ tsp

Sugar – ¾ tsp

Turmeric (Haldi) Powder – ¼ tsp

Salt to taste

Preparation:

Parboil the vegetables with a bit of salt. Crush the bread slices in a food processor into fine grains.

Heat 1 tsp butter in a pan. Add Cumin Seed. When it crackles, add ginger, garlic and green chilli. Stir.

When the raw smell of ginger goes away, add the par boiled vegetables and cook for a couple of minutes.

Add Haldi, Chilli Powder, and Sugar. Mix well and cook for another couple of minutes.

Move all of them to one side of the pan. In the other side, drop the balance Butter, spread on the pan. Break the Eggs and pour on to the butter. Add pepper powder and salt.

Scramble the egg. Mix it with the vegetables.

Add the Tomatoes and Onion and mix well.

Add the Crumbled Bread. Mix well and cook till all the masala flavor infuses into the bread crumbs.

Add Cilantro.

Mix well and transfer to a serving bowl.

Done!

Notes:

Any kind of Bread can be used for this dish.

Spiciness can be adjusted with the quantity of Chilli Powder used. Chilli can be avoided also if required.

Add Onion and Tomato last to keep them crunchy.

Vegetables used can be of own choice – not necessarily the ones used here.
