This is a very simple and easy to make Egg Dish. It is a good side dish to go well with rice or Roti. We can make it really quick with few ingredients generally available at home
Ingredients:
Eggs – 4
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Finely Chopped Onion – ½ cup
Ginger Garlic Paste – 1 tsp
Large Tomatoes – 2 (crushed)
Red Chilli – 1 tbsp
Turmeric Powder – 1 pinch
Green Chilli – 2 (sliced)
Coriander Seed Powder – 1 tsp
Kasoori Methi – 1 tsp
Garam Masala – ¼ tsp
Salt – to suit taste
Chopped Coriander Leaves – 2 tbsp
Method:
Heat the Oil in a broad pan. Crackle the Cumin Seeds. Add the Onions. Sauté it with little Salt and ginger garlic paste till the Onion become golden brown.
Add the crushed Tomatoes. Stir cook for 2 minutes. Add the Chilli Powder, Corriander Powder, Garam Masala, Turmeric Powder and Salt. Stir them well. Add 2 to 3 tbsp of water. Cover with a lid and simmer for 3 to 4 minutes till the Tomatoes are mashed.
Add a cup of water. Add Kasoori Methi crushed with hands. Add chopped coriander leaves and simmer for 3 to 4 minutes.
Add 2 sliced Green Chillies. Mix them. Break the Eggs to this gravy. Add Coriander Leaves. Sprinkle Garam Masala. Cover with the lid and simmer for 3 to 4 minutes over low to medium flame. Flip the Eggs and leave for a minute. Cut the Eggs with a spatula. Mix. Garnish with chopped Cilantro and serve.
