Radish Stir Fry is a healthy dish in the Indian Cuisine. As Radish Greens are slightly bitter, I paired them with lentils and Coconut so that the bitterness will not be felt while eating. You will not find any trace of that bitterness in this dish. It can be served with Roti, Rice, Chappati etc.
Ingredients:
Radish with the Greens – from 4 radishes
Moong Dal / Green Gram – 3 tbsp
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Urad Dal – 1 tsp
Dried Red Chillies – 2 (broken)
Onion – 1 (finely chopped)
Turmeric Powder – 1 pinch
Salt – to suit taste
To Grind:
Grated Coconut – ¼ tbsp
Dried Red Chilli – 2 to 3
Garlic Pods – 2
Method:
Wash and rinse the Moong Dal. Cook them in a pressure cooker for one whistle. Keep aside. Ensure that the Dal is not over cooked.
Peel and wash the Radishes and chop them into fine pieces. Rinse the Radish Greens, keep it as a pile and chop them finely.
Heat the Oil in a pan. Add the seasoning and fry without burning them. Add the Onion and fry them till they turn translucent. Now, add the Radish and its finely chopped leaves. Add Salt and the Turmeric Powder.
Cook them for 6 to 8 minutes. Grind the Coconut coarsely along with Red Chillies and Garlic. Add it to the pan. Add the cooked Moong Dal.
Stir very well to combine everything well. Cover with a lid and simmer for 2 minutes in low flame. The dish is ready. Transfer it to a serving bowl.
Serve with Rice, Roti, Chappati etc.
Note:
If the Radish is not tender, you have to sprinkle some water and cook.
