Garlic is used as a spice in cooking. But, it is a wonder spice with so many health benefits. And it is used in preparation of so many medicines to treat cholesterol, heart disease, hyper tension, stomach cancer etc. It is advised from time immemorial to add it as a main ingredient in your cooking to avail its health benefits. We will see here how to make a very tasty pickle with Garlic as the main ingredient.
Ingredients:
To roast and powder:
Methi (Fenugreek) – ½ tsp
Mustard Seeds – 1 tbsp
Other Ingredients:
Peeled Garlic Pods – 1 cup
Oil – 3 tbsp
Mustard Seeds – ¾ tsp
Curry Leaves – from 1 sprig
Asafoetida – ¼ tap
Red Chilli Powder – 2 tsp
Turmeric Powder – ¼ tsp
Jaggery – ½ tsp
Lemon Juice – 1/3 cup
Salt – to suit one’s taste
Method:
Dry roast the Fenugreek Seeds till they start spluttering. Add the Mustard seeds and roast them till the Mustard Seeds pop up. Allow them now to cool. And then powder them to a fine powder and keep aside.
Heat the Oil in a pan. Add Mustard seeds. When they crackle, add the Curry Leaves. And add the Asafoetida and Garlic Pods in a few seconds. Cook them in low flame for 2 minutes.
Add a tsp of Salt. Mix well and simmer for 6 to 8 minutes in low medium flame stirring in between till the Garlic Pods become tender.
Add Red Chilli Powder and a spoon of the Mustard cum Fenugreek Powder what we prepared. Add the Turmeric Powder and Jaggery. Stir very well. And now allow to cook in low flame for 2 to 3 minutes.
Allow the pickle to cool.
Add ¾ quantity of the Lemon Juice, mix well. If you prefer the pickle to be tangy little more, add the remaining Lemon Juice. Adjust Salt. Mix well. Store in an Air Tight Container.
Enjoy the pickle with Curd Rice – Dal Rice – Roti etc.
Note:

Select Garlic with smaller sized Pods which are more healthy than the big sized pods. If you do have the big pods, slice them into 2 or 3 pieces to make this pickle.
