Carrot is a very tasty vegetable which you can eat fresh without any cooking. This dish is a simple and easy stir fry dish with Carrot which can be served as a snack as well. We can stuff Parathas as well as Sandwiches using this stir fry as stuffing. This Carrot Podimas goes well with Sambar Rice, Dahi Rice etc also.
Ingredients:
Carrots – 500 GMs
Oil – 1 tbsp
Mustard Seeds – ½ tsp
Urad Dal – 1 tsp
Finely Chopped Onion – ½ cup
Green Chillies – 2 (finely chopped)
Curry Leaves – from 2 sprigs
Crushed Garlic Pods – 1 tsp
Red Chilli Powder – ¼ tsp
Coriander Seed Powder – ½ tsp
Turmeric Powder – 1/8 tsp
Finely Chopped Cilantro – 3 tbsp
Roasted and coarsely crushed Peanuts – 3 tbsp
Cilantro and crushed Peanuts – for garnishing
Salt – to suit taste
Method:
Wash the Carrots and wipe clean. Peel off the skin. Chop the Carrots into small pieces. Take these pieces in a food processor and chop them finely or grate them in a Carrot grater with big holes.
Heat the Oil in a pan. Add Mustard Seeds and Urad Dal. When the Dal turns pink, add Curry Leaves, Green Chillies, Onion and the crushed Garlic. Sauté till the Onion turns translucent.
Add the finely chopped Carrot, the spice powders, and Salt. Mix them well. Simmer them for 4 to 5 minutes covered with a lid in low medium flame. Ensure to stir them in between.
Add Cilantro and Peanut Powder. Stir well. Place the lid again and simmer for a couple of minutes.
Transfer to a serving bowl. Garnish with Cilantro and Peanut Powder.
Note:
- I used soft, sweet and juicy Carrots. If the Carrots are hard and orange, the cooking time will differ little.
- Adjust the spiciness to suit taste and also depending on the Carrot you use.
