Drumstick/Moringa is a wonder vegetable. The health benefits of this vegetable are numerous. It improves digestive health, helps in developing strong bones, regulates blood sugar levels, relieves respiratory disorders, boosts immunity. We can make varieties of tasty dishes using drumstick. Generally we use drumstick as an add-on vegetable while cooking some dishes like Avial, Sambar etc. But we will see a dish here which uses drumstick as the main ingredient. This dish will go very well with Sambar Rice, Rasam Rice, Curd Rice etc.
Ingredients:
Drumstick – 3 (cut into 2 inch long pieces)
Oil – 2 tbsp
Mustard Seeds – 1 tsp
Cumin Seeds – ¾ tsp
Garlic – 5 pods (crushed or chopped)
Onion (medium) – 2 Nos (finely chopped)
Tomato – 3 Nos (finely chopped)
Turmeric Powder – 1 pinch
Cumin Seed Powder – 1 tsp
Red Chilli Powder – ¾ tsp
Garam Masala – ¼ tsp
Salt to taste
Finely chopped Coriander Leaves – 2 tbsp
Method:
Heat the Oil in a pan. Add the Mustard Seeds and Cumin Seeds and allow them to crackle. Add the finely chopped Onions, Garlic and a little Salt. Stir cook till the Onion becomes translucent.
Add Tomato and add Turmeric Powder, Cumin Seed Powder, Red Chilli Powder.
Cook till the Tomatoes become soft.
Add a cup of water.
When it comes to a boil, add the chopped Drum Stick pieces. Mix well. Adjust Salt. Cover the pan with a lid. Simmer for 6 to 8 minutes till the Drum Stick Pieces are done.
Add the Coriander Leaves.
Mix well.
The tasty Drum Stick Masala is ready.
