Broken Wheat Payasam (Wheat Rava Payasam) is a very tasty and healthy sweet dish. I have used regular and Coconut Milk in this receipt whereas the tradition is to use regular milk only.
Ingredients
Broken Wheat (Wheat Rava) – ½ cup
Jaggery – 1 cup
Water – 3 cups
Cardoman Powder – ¼ tsp
Coconut Milk (Thick Milk) – ¼ cup
Boiled Regular Milk – ¼ cup
Cashew – 12 Nos
Raisin – 1 tbsp
Ghee (Clarified Butter) – 2 tsp
Grated Coconut – 3 tbsp
Method
Dry roast the Wheat Rava in medium flame till the raw smell goes away and the color changes little.
Pressure cook the roasted Wheat Rava with 3 cups of water in medium flame for 4 to 5 whistles till it becomes soft.
Boil ¾ cup of water. Add Jaggery and simmer till the Jaggery dissolves fully. Strain to remove the impurities, if any.
Add the cooked broken Wheat and mix well. Simmer for 4 to 5 minutes.
Add the regular Milk, mix and cook for a couple of minutes. Add the Coconut Milk.
Stir well.
Add Cardamom Powder.
Simultaneously, heat 2 tsp of Ghee in a small pan. Add Cashew and fry it till it becomes golden brown. Add Raisin and stir. Add the grated Coconut. Roast till the Coconut turns to a light brown color.
Add this mix to the cooking Payasam. Mix well.
Done!
Serve hot.
Note:
Adjust the quantity of Jaggery to suit taste.
Coconut Milk – can be home made fresh coconut milk or tinned coconut milk. You can use Coconut Milk Powder also to make the Coconut Milk.
