Cilantro Rice is a very flavorful tasty delicious rice preparation. It is a very easy and quick to make recipe if you have cooked Rice ready with you. The rice which we use should be fully moisture free. You can also use left over rice if you have stored them in the refrigerator.
You can also experiment by add Pudhina (50 percent Pudhina and 50 percent Cilantro) if you like Pudhina flavor and taste. And you can add vegetables of your choice. To make this rice healthier, you can add Broccoli also.
It is always advisable to cook the rice in advance and allow it to cool and then use for making this rice preparation. It helps in preventing the Coriander Rice from turning mushy.

Ingredients :
For making the Masala:
Cilantro – 1 cup
Green Chillies – 2
Cloves – 4
Cinnamon Stick – 1 inch long
Green Cardamom – 2
Black Pepper Corns – 15
Lemon Juice – 1 tbsp
For making the Rice :
Oil – 1 tbsp
Ghee – 1 tbsp
Bay Leaf – 2
Cumin Seeds – 1 tsp
Cashew Nuts – 15
Onion (medium sized) – 1 (finely chopped)
Ginger Garlic Paste – 1 tsp
Carrot (small sized) – 1 (cut into pieces)
French Beans – 10 (cut into pieces)
Green Peas – ½ cup
Cumin Seed Powder – ½ tsp
Coriander Seed Powder – ½ tsp
Rice (cooked) – 3 cups
Finely chopped Cilantro – 2 tbsp
Salt – to suit taste
Method:
Grind together all the ingredients given under “For Masala” column into a fine paste with required water.
Heat the Oil and Ghee together in a wide pan. Add the Bay Leaves and Cumin Seeds. Allow the Cumin Seeds to sizzle. Add the Cashew Nuts. Roast them crunchy. Add the Onion. Stir fry for few seconds. Add the Ginger Garlic Paste. Cook for a minute or till the raw smell of the paste goes away. Add all the vegetables. Stir cook for a minute.
Add ¼ cup of water. Add Salt. Mix well and simmer for 2 to 3 minutes till the vegetables are 50 percent done.
Add the ground Masala Mix well. Add the Cumin Seed Powder & Coriander Seed Powder. Add the cooked Rice, Salt for the portion of rice, finely chopped Coriander leaves. Mix gently.
Cover and simmer for 2 more minutes so that the Rice absorbs all the Masalas and their flavor.
The Cilantro Rice is done. Transfer to a serving bowl.
