Coconut Rice with Grated Coconut

Coconut Rice with Grated Coconut

Coconut Rice is a typical South Indian Recipe. I have already posted Coconut Rice cooked with Coconut Milk. Another variation is to cook with grated Coconut.

Ingredients

Cooked Rice – 1 bowl

Grated Coconut – 1 cup (heaped)

Oil or Ghee (Clarified Butter) – 2 tsp

Mustard Seed – ¼ tsp

Urad Dal – 1 tsp

Cashews – 8

Red Chilli (Broken) – 1

Green Chilli – 2 (sliced)

Curry Leaves – from 1 twig

Salt to taste

Method

 

The cooked rice must be stiff and the grains must be separate.

Heat the Oil or Ghee in a pan.

Add Mustard and Urad Dal and allow the Mustard to crackle.

Add Cashews, Red Chilli, Green Chilli and Curry Leaves. Mix well.

Add the cooked Rice and grated Coconut. Add Salt.

Mix well to combine all the ingredients to mix with each other. Stir for a couple of minutes.

Transfer to a serving bowl.

Serve with Potato Curry, Pickle or Papad.

Notes:

Any left over rice can also be used for this recipe.

If fresh coconut is not available, grated Coconut which is stored in refrigerator can be used. Thaw it before use.
