This is one of those easy to make lunch box recipes which are guaranteed to be delicious!
Ingredients:
Cooked rice: 1 bowl
Lemon juice: 1 tsp
To grind:
Cilantro leaves 1 cup (tightly packed)
Ginger: 1” grated
Green chilies: 3-4
Salt to taste
To temper:
Oil/ghee: 1 tbsp.
Mustard seeds: 1 tsp
Urad dal: 1 tsp
Bengal gram dal (chana dal): 1 tbsp.
Asafoetida powder: ¼ tsp
Dry red chilies: 3 (broken)
Cashews: 10
Peanuts: 2 tbsp.
Method:
Grind all the ingredients listed under “To grind” section with little water.
Heat ghee or oil in a pan. Add mustard seeds. Once they crackle, add urad dal, chana dal, peanuts and red chilies.
Roast for a minute and then add cashews. Roast till cashews turn light golden brown. Add the ground paste and cook until water evaporates. Add the rice, cilantro leaves and salt. Mix lightly.
Add lemon juice.
Cook for a minute.
Done!
