Poha (flattened Rice) is generally used to prepare very tasty breakfast dish. It is said that Poha has high carbohydrates and less fat and is also very fiber oriented. It has very less calorific values. So, a breakfast prepared with Poha can leave a feeling of fullness for a long time which helps in avoiding the craze for a in between snack – thus helping in weight loss. Poha is used to make varieties of breakfast dishes and we will see how to make a very tasty breakfast dish with Poha combined with Capsicum to make a twist in the general Poha recipe.
Ingredients:
Poha – 1 cup (Red or White Thick Poha/ Flattened Rice)
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urad Dal – 1 tsp
Curry Leaves – from 1 twig
Onion – 1 (Finely Chopped)
Grated or Crushed Ginger – 1 tsp
Chopped Red, Yellow and Green Capsicum – 1 cup
Red Chilli Flakes – ½ tsp
Tomato – 1 (Deseeded and Finely Chopped)
Finely Chopped Cilantro (Coriander) Leaves – 2 tbsp
Lemon Juice – 1 tsp
Method:
Soak the thick Poha in generous amount of water for a minute. Drain the water thru a strainer. Keep aside.
Heat the Oil in a pan. Add Mustard Seeds and Urad Dal. When the Dal turns pink, add the Onion, Curry Leaves and Grated Ginger. Sauté them for a minute in medium flame.
Add Capsicum, Salt and Chilli Flakes. Cook for 2 minutes covered with a lid.
Add the soaked Poha, sprinkle few spoons of water. Stir weel and simmer for 2 minutes covered with a lid. Add the chopped Tomato. Stir well. Simmer for 2 more minutes.
Add the chopped Cilantro and Lemon Juice. Mix well. And transfer to a serving bowl.
