Burnt Chilli Rice is an Indo Chinese Recipe. I have tasted this dish in some restaurants and I wanted to make this at home. I tried to find this recipe online, but could not find the perfect one. I started experimenting and found the perfect recipe. It turned out to be a very simple method to prepare the Burnt Chilli Rice as long as you have cooked long grain rice and Chinese Chilli Oil (Chilli Garlic Oil) ready with you.
Ingredients:
Sesame Oil – 1 tbsp + 1 tsp
Red Chillies (Broken) – 8 to 10
Garlic – 5 pods (finely chopped)
Onion – 1 (finely chopped)
Chopped Spring Onion – leaves only – 2 tbsp
Chilli Oil with chilli flakes – 3 to 4 tbsp
Black Pepper Powder – ¼ tsp
Salt to taste
Boiled Rice – 1 bowl ( 4 cups)
Method:
Heat 1 tsp of Oil in a pan. Fry the broken Red Chillies in it till they become crisp in low to medium flame. Transfer it to a plate and a small bowl and keep aside.
Add 1 tbsp of Oil in the same pan and allow it to become hot. Add the Garlic. Sauté it for a minute in medium flame. Add the finely chopped Onion and stir cook it turns brown. (Do not burn the Onions).
Add the roasted Red Chillies , boiled Rice, Salt, chopped Spring Onion Leaves, Black Pepper Powder and the Chilli Oil with the Chilli Flakes.
Stir cook the rice gently without breaking the grains. The rice should be heated fully.
Transfer to a serving bowl. Serve in a platter garnished with Spring Onion.
Note:
Adding Chilli Oil with its Chilli Flakes will not make the rice spicy: in fact it would add flavor to the dish. The chilli flakes in the Oil are already fried well and so, it gives a smoky flavor. Add only 3 tbsp of Chilli Oil first. If you want more flavor, add more Chilli Oil.
