Let us see a simple and easy dish prepared with Aloo Gobi as the main ingredient and served with Roti and Rice. It is an apt side dish to be packed in a lunch box. It is definitely a very tasty dish.
Ingredients:
Cauliflower – 250 Gms
Potatoes (Peeled and cut into 1inch sized cubes) – 1 cup
Large Tomatoes – 1 (chopped)
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Crushed Ginger – 1 tsp
Green Chillies – 2 (finely chopped)
Onion – 2 (finely chopped)
Turmeric Powder – ¼ tsp
Salt – to taste
Cumin Seed Powder – ½ tsp
Garam Masala – ¼ tsp
Red Chilli Powder – ¼ tsp
Finely Chopped Cilantro – 2 tbsp
Amchur Powder – ¼ tsp
Method:
Cut the Cauliflower into florets. Rinse it well. Immerse them in warm water with ½ tsp of Salt. Mix them. Drain the water after 5 minutes. Rinse once again.
Heat the Oil in a pan. Add Cumin Seeds and allow them to crackle. Add the crushed Ginger, finely chopped Onion and Green Chillies. Sauté the Onion translucent. Add the Potatoes, Turmeric Powder and little Salt. Mix them well. Cover with a lid and simmer for 4 to 5 minutes in medium flame stirring in between.
Add the Cauliflower florets, chopped Tomatoes, Chilli Powder, Salt, Garam Masala and required Salt. Mix well. Add 4 to 5 tbsp of water, Mix well. Cover with a lid and simmer for 6 to 8 minutes in low to medium flame till the vegetables are cooked properly. Add Amchur Powder.
Mix very well.
Serve with rice or Roti.
