Yogurt Vegetable Sandwich

Another variation of sandwiches is the Mixed Vegetable Yogurt Sandwich. You can also call it a Raita Sandwich.

Ingredients:

Yogurt (Hung Curd) – ¾ cup

Mayonnaise – 2 tbsp (Optional)

Grated Carrot – ½ cup

Onion – 1 (finely chopped)

Finley chopped Yellow Bell Pepper – ¼ cup

Tomato (Large Sized) – 1 (Deseed and chop finely)

Coriander Leaves – 2 tbsp (finely chopped)

Green Chilli – 1 (finely chopped)

Grated Ginger – ¼ tsp

Red Chilli Flakes – 1 pinch

Black Pepper Powder – ¼ tsp

Salt to taste

Lemon Juice – 1 tsp

Bread Slice – 6

Butter – 2 tsp

Method:

Take all the ingredients in a mixing bowl.

Add the Yogurt, Mayonnaise, Chilli Flakes, Green Chilli, Pepper Powder, Grated Ginger and Lemon Juice. Add Salt as required.

Mix and combine all of them together.

Apply Butter on one side of a Bread Slice. Spread Yogurt Stuffing on the other side of the slice.

Cover with another slice of the bread. Press them together. Add some butter on the top of this Sandwich. Grill the Sandwich in a toaster till the grill marks appear on the Sandwich. Cut the Sandwich into half.

Serve with fruits or juice or coffee or Tea.

How to make Hung Curd:

Place a muslin cloth over a plate or a bowl. Pour the Curd and wrap it. Squeeze out the liquids from the Curd as far as possible. Throw the water away.

Tie the cloth (with the Curd) with a thread. Hang it in the refrigerator for 4 to 5 Hours keeping the vessel below it.

The Hung Curd (Yogurt) is ready. The curd will not turn sour sine it is in the refrigerator.
