Vegetable Stew (Kerala Style)

Vegetable Stew (Kerala Style)

Vegetable Stew is a traditional Kerala dish prepared with Coconut Milk Base tempered with Coconut Oil. Coconut Milk and Coconut Oil give a typical tasty flavor to this recipe.

Ingredients

Coconut Oil – 1 ½ tsp

Cinnamon Stick – 2 inch long piece

Cardoman (Elaichi) – 2

Bay Leaf – 2

Onion (Big Sized) -1 (sliced)

Green Chilli -3 (slitted)

Curry Leaf – 1 strand

Grated Ginger – 1 tsp

Mixed Vegetables – 1 cup (Potato, Vatana, Carrot, Beans etc)

Thick Coconut Milk – 1 cup

Thin Coconut Milk – 1 cup

Method

Clean and cut vegetables into cubes or lengthy strips.

Heat the Oil in a pan. Add Bay Leaf, Cinnamon Stick, Cardoman and Curry Leaves.

Add the sliced Onion and Grated Ginger. Sauté till the Onion becomes translucent.

Add mix Vegetables and Sauté for a couple of minute.

Add the thin Coconut milk. Bring them to a boil. Add Salt and mix.

Lower the flame. Cover and cook for 8 to 10 minutes till the Vegetables are cooked well.  Add the Thick Coconut Milk. Cover and simmer for a couple of minutes.

Done!

This stew goes well with Appam, Idli, Dosa, and Bread and also with hot rice.
