Pudalangai (Snake Gourd) is usually cooked as a kootu (mash) or Poriyal (Stir fry). I tried by hand at this stuffed Pudalangai which went very well as side dish with Sambar Rice, Dal Rice etc. It can be served as a starter or as an appetizer also. You can create your own stuffing for this tasty dish like Cheese, Potato, Soya Granules, Dals etc.
Ingredients:
To Grind:
Pudalangai (Snake Gourd) – 500 Gms
Oil – 2 tbsp + 2 to 3 tbsp
Finely chopped Onions – 1 ½ cups
Turmeric Powder – ¼ tsp
Chilli Powder – 1 tsp
Garam Masala – ½ tsp
Salt – to suit taste
Grated Fresh Coconut – ¼ cup
Roasted and crushed Peanuts – ½ cup
Roasted Chick Pea Flour (Besan) – 3 tbsp
Coriander Leaves – 3 tbsp
Method:
Wash the Pudalangai. Scratch the skin with the back of a knife. Cut the Pudalangai (Snake Gourd) into 2 to 3 inch log rounds. Scoop out the seeds and the spongy interior from each round. Discard the hard seeds and chop finely the balance scoop outs which we will be using. Keep aside.
Boil 4 to 5 cups of water in a vessel. Add Salt. Add the Pudalangai Rings.
Cook for 3 to 4 minutes. Strain the water and allow the Pudalangai to cool.
In the meanwhile, let us prepare the stuffing. Heat one tsp of Oil in a broad nonstick pan. Add Jeera. Add Onions within few seconds. Add the chopped scoop outs. Sauté the Onions translucent.
Add Salt, Turmeric Powder, Garam Masala, Chilli Powder and Salt. Roast them for 2 to 3 minutes.
Add the grated Coconut, Peanut powder and the roasted Besan. Cook for a couple of minutes.
Add Coriander Leaves and mix. The stuffing is ready. Transfer to a vessel or plate.
Stuff the Pudalangai rings with this stuffing. Keep it ready.
Heat 3 tbsp of Oil in the same pan.
Keep the stuffed Gourd Rings on this pan with space in between each ring. Cook these rings in low to medium flame for 3 to 4 minutes.
Flip them one by one and roast the other side also.
The Pudalangai Stuffed Rings should become golden on all sides.
The tasty Stuffed Pudalangai is ready for serving as a starter or as an appetizer or as side dish with Sambar Rice etc.
Note:
You can also make stuff the Pudalangai Rings as above and store it in the refrigerator and start roasting them when you need. It makes the cooking easy.
