Sweet Potatoes are generally available during the winter season. You can boil/bake it or eat raw as well. You can make stir fried Sweet Potatoes or Poriyal or Gravy. The stir fried Sweet Potato is a very simple recipe.
Ingredients:
Sweet Potato – 400 Gms
Oil – 2 tbsp
Cumin Seed – ¾ tsp
Onion – 2 (sliced)
Green Chilli – 1 (chopped)
Crushed Ginger – 1 tsp
Coriander Seed Powder – 1 tbsp
Red Chilli Powder – ¾ tsp
Cumin Seed Powder – ½ tsp
Turmeric Powder – ¼ tsp
Salt to taste
Chopped Coriander Leaves – 1 tbsp
Method
Peel and cut the Sweet Potatoes into thin slices. Immerse them immediately in salted water to avoid discoloration.
Heat the Oil in a pan. Add Cumin Seed. When they crackle, add sliced Onion, Green Chilli and crushed Ginger. Fry them till the Onion becomes translucent.
Add sliced Sweet Potatoes and the Red Chilli Powder, Cumin Seed Powder, Coriander Seed Powder, Turmeric Powder and Salt.
Stir fry them for 3 to 5 minutes stirring evenly. Cover the pan and cook in low flame till the Sweet Potatoes are cooked completely stirring in between. Remove the lid and continue stir cooking for 4 to 5 minutes till the Sweet Potatoes turns golden brown.
Add Coriander Leaves.
Transfer to a serving bowl. Serve with Rice and Sambar or Dal or Rasam etc.
