Dishes are made with Mustard Greens (leaves of the Mustard Plant) usually during the winter season. Mustard Green is a power house of anti-oxidants and contains other important nutrients like Vitamin A, C, K and E. It detoxifies liver and blood. It helps in lowering cholesterol and strengthening of bones.
Ingredients:
Mustard Greens – 1 bunch (finely chopped)
Green Grams – ¼ cup
Oil – 2 tbsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Cumin Seeds – ½ tsp
Onion – 1 (finely chopped)
Green Chilli (spicy variety) – 3
Grated Coconut – 3 tbsp
Salt to taste
Method:
Wash and rinse the green gram lentil. Cook it in a pressure cooker with less than ¼ cup of water for 2 whistles. Dal must be cooked soft, but not mushy. Each lentil should remain separate.
Heat the Oil in a broad pan. Add Mustard Seed, Urad Dal and Cumin Seed. Let the Mustard splutter. Add the finely chopped Chilli and Onion. Cook till the Onions turn translucent.
Add the Mustard Greens. Stir it well. Cover the pan with a lid and simmer for 4 to 5 minutes in low to medium flame till the greens are cooked well.
Add red Chilli Powder, Salt and boiled Green Grams.
Stir cook for 3 to 4 minutes. Adjust Salt.
Transfer the tasty , healthy stir fried Mustard Greens to a serving bowl. Serve with Rice, Roti, Chappati etc.
