Who doesn’t like breakfast for dinner? Below is a fun and delicious way to include omelette in your dinner 🙂
Ingredients:
For Omelette
Egg – 2
Onion- 1 (finely chopped)
Green Chilli- 2 (finely chopped)
Tomato (Medium Size) – 1
Cilantro Leaves- 1 tbsp ((finely chopped)
Oil – 1 tsp
Salt to taste
For Gravy
Onion (Big) – 1
Green Chilli – 1 No
Ginger – 1 inch (made to a paste)
Garlic – 5 cloves
Tomato (Big) – 2 Nos
Dhania Powder (Coriander Powder) – 1 tbsp
Chilli Powder- 2 tsp
Haldi (Turmeric) Powder – ¼ tsp
Jeera (Cumin Seed) – ½ tsp
Garam Masala – ¼ tsp
Cilantro Leaves – 1 tbsp ((finely chopped)
Oil – 2 tbsp
Salt to taste
Preparation:
Break the eggs into a bowl. Whisk it well.
Add all other ingredients under “For omelette”.
Whisk well.
Heat a griddle/ pan. Drizzle oil. When the pan becomes hot, pour the egg mixture and spread into a big round (7 to 8 inches in diameter) uniformly.
Cook on medium heat.
When the omelette becomes a little stiff, flip it and drizzle some oil all around the omelette on its side. Cook for 2 minutes and remove into a plate.
Cut the Omelette into pieces (~ 2 inch squares).
Heat ¼ tsp of oil in a pan and sauté Onion, Green Chilli, and Garlic for two minutes.
Cool it and grind to a fine paste with very little water.
Chop the tomatoes and grind it into a paste with Coriander Powder, Turmeric Powder, Haldi Powder, Chilli Powder and Salt.
Heat 2 tbsp of oil in a pan. Add Jeera (Cumin) seeds. Allow to crackle.
Add Onion paste and cook on medium flame till the raw smell goes away.
Add Tomato paste.
Cook till the gravy becomes thick.
Pour two cups of water (more if the gravy is to be thin) and Garam masala. Mix well, cover and cook for 2 minutes till it starts boiling.
Add the omelette pieces, cilantro leaves and mix gently without breaking the omelette pieces.
Allow to cook for 30 seconds. Add chopped cilantro.
Done!
Goes with rice and roti etc.
Notes:
Omelette should not be over cooked.
Omelette should be added only when ready to serve or it will absorb most of the gravy.
If you plan to serve this as a side dish with rice, make the gravy thicker.
Consistency of gravy should be adjusted keeping in mind that the omelette tends to absorb the gravy.
