I had posted the method for making Idiyappam easily at home. Using this Idiyappam, you can make many varieties of dishes easily. Let us see one such Sevai dish here. If you have rice Sevai at hand, you can use it as well to make this dish.
Ingredients:
Idiyappam – 2 cups (Or Rice Sevai bought from the stores- ½ pocket)
Fresh Grated Coconut – ¼ cup
Ghee or Oil – 2 tsp
Mustard Seed – ½ tsp
Split Urad Dal – 1 tsp
Grated Ginger – 1 tsp
Green Chillies – 2 (finely chopped)
Onion – 1 (finely chopped) – this is optional
Curry leaves – from 1 twig
Salt to taste
Finely chopped Coriander Leaves – 1 tbsp
Lemon Juice – 1 tsp
Method:
If you are using Rice Sevai brought from the stores, boil 2 cups of water. Immerse the Sevai and switch off the flame. Allow it to rest for 3 to 4 minutes. Drain and spread the Sevai on a plate. Drizzle a spoon of Oil over it, stir it gently and keep aside. If you are using homemade Sevai (Idiyappam), separate the strands gently and keep aside.
Heat the Ghee or Oil in a pan. Add Mustard Seed and allow it to crackle. Add the Urad Dal. When it turns golden, add finely chopped Onion and Green Chilies, grated Ginger and Curry Leaves. Cook them till the Onion becomes translucent.
Add the Rice Sevai, Salt and the grated Coconut. Allow the Sevai to get cooked in low flame for 2 minutes.
Add the Coriander Leaves and the Lemon Juice. Mix well.
Transfer to a serving bowl. Serve when it is warm.
Note:
If you are using Sevai bought from stores, follow instructions on the packet to prepare it.
