Schezwan Fried Rice

Schezwan Fried Rice

Schezwan Fried Rice is a very popular Indo Chinese Dish. It is similar to the Chinese Fried Rice, but Schezwan Fried Rice has the Schezwan Sauce added to it which gives a special flavor to the dish.

Ingredients:

To cook the Rice:

Basmati Rice – 1 heaped cup and another half cup

Water – 3 cups

Salt to taste

Oil – ½ tsp

Other Ingredients:

Sesame Oil (or any other cooking oil) – 1 tbsp

Vegetable Oil – 2 ½ tbsp

Thinly chopped Garlic Pods – 1 tbsp

Finely Chopped Ginger – 1 tsp

Green Chilli – 1

Spring Onion Bulb -2 (finely chopped)

Mixed Vegetables (finely chopped) – 1 to 2 ½ cups (1 medium sized Carrot, 10 French Beans, ¼ cup Cabbage and 1 bell pepper

Schezwan Sauce – 3 to 4 heaped tbsp

Pepper Powder – ¼ tsp

Spring Onion Greens (chopped) – ¼ cup

Chilli Oil – 1 tbsp

Method:

Rinse the Rice in running water – two to three times till the water becomes clear. Soak the rinsed Rice in 2 ½ cups of water for 30 minutes.

Strain well and keep aside.

Boil 3 cups of water in a deep pan; add ½ tsp of Oil and ½ tsp of Salt. Let the water come to a boil.

Add the Rice carefully without splashing the water. Stir it gently.

Cover the pan with a lid. Lower the flame and cook the Rice for 8 to 10 minutes till the Rice is cooked soft, tender and fluffy. Check the rice twice or thrice while cooking to ensure that it is cooked soft and fluffy. If required, add 3 to 4 tbsp of hot water in between if the water level becomes low. Take two or three grains of the cooking Rice in between the fingers and press them with fingers to check whether the rice has been cooked soft. Switch off the flame. Open the pan and fluff the rice gently.

Transfer the Rice to another vessel. Allow it to cool.

Heat the Oil in a pan. Add the finely chopped Ginger, Garlic and Green Chilli. Stir for 30 seconds in medium flame. Add the Onion. Stir cook for a few seconds.

Add the chopped Vegetables. Stir fry for 3 to 4 minutes in high flame. The vegetables should be cooked crunchy.

Add 3 tbsp of Schezwan Sauce, the Green Onions, and Pepper Powder. Adjust Salt and mix well.

Add the cooked fluffy Rice and chilli Oil. Mix gently without breaking the grains of Rice.

Stir and toss well so that the Sauce is mixed well with the rice evenly. Taste the Rice. Add more Schezwan Sauce, if required.

Transfer to a serving bowl.

Note:

Ensure that the vegetables are cooked crunchy.
