Arisi Payasam is the simplest of all the varieties of kheers or puddings with very less ingredients. This is served as a sweet desert after a heavy meal. It is also one of the offerings to God during auspicious days.
Ingredients:
Rice – 3 tbsp (Basmati Rice is preferred)
Milk – 3/4 liter (whole milk)
Water -1/4 liter
Sugar-4 tbsp
Cardomom (Elaichi) Powder – 1 pinch
Cashew Nuts – 12 Nos
Raisin – 1 tbsp
Ghee (Clarified Butter) – 2 tsp
Almond – 2 sliced
Preparation:
Wash and soak Rice in water for 30 minutes and drain water.
Heat Milk and water together in a Nonstick pan.
Add Rice and cook, cover with a lid leaving some gap and cook on a low medium heat. Do not cover fully else milk will boil and spill out.
Stir every five minutes.
Cook till the Rice becomes soft, but not mushy. It takes around 20 to 30 minutes of cooking.
Add Sugar and allow it to melt and mix with rice.
Cook for 5 more minutes and transfer to a serving bowl.
Heat Ghee in a pan and roast the cashew nuts and raisin.
Pour it over the Rice along with some cardamom powder and mix gently.
Garnish it with Almond.
Done!
It can be served either hot or cold.
