Red Sauce Pasta is a delicious dish for the kids and grown up as well. The perfectly cooked Penne Pasta and richly flavored Tomato Sauce make a great match. Try this at home and it will be as good as the one you get in the restaurants.
Ingredients:
Penne Pasta or any other Pasta – 1 ½ cup
Olive Oil or Butter – 2 tbsp
Bay Leaf – 1
Garlic – 6 cloves (Crushed or finely chopped)
Onion Small Sized – 1 (finely chopped)
Tomatoes – 5 (Blanched, Peeled and Chopped)
Tomato Ketchup – 2 tbsp
Pasta Masala – 1 tsp
Chilli Flakes – one pinch
Oregano – one pinch
Black Pepper Powder – ¼ tsp
Fresh Basil Leaves – 4 to 5 (torn into pieces)
Mozzarella Cheese – as required (Optional)
Salt to taste
Method:
Cook Pasta in boiling salted water as per direction given in the package. Drain the water away. Rinse the Pasta. Keep aside.
Blanch tomatoes.
Make a fine puree of the blanched Tomatoes in a blender or a mixer. Keep it aside.
Heat the Olive Oil in a pan. Add Bay Leaf and the crushed Garlic. Fry them for 30 seconds in medium flame.
Add the Onion and sauté them till the Onion turns translucent.
Add the Tomato Puree and Salt and cook for 2 to 3 minutes. Add the Chilli flakes, Pepper Powder, Basil Leaves, and Oregano.
Cover the pan with a lid and simmer till you get the required consistency (If not covered, the ingredients will splash).
Add the cooked Pasta. Make sure that the Pasta is not watery. Taste and adjust the seasoning.
Take it out from the flame. Toss everything together gently. Add Cheese, mix well .
Garnish with Cheese and serve hot.
Note:
This was prepared little thick. But, it can also be prepared little saucy also.
