It is summer and it is the season for all varieties of Mangoes. And we get busy with making various kinds of juices, desserts, pickles etc using ripe Mangoes or Raw Mangoes. And Aam panna or Aam Jhora is a healthy drink prepared with Raw Mangoes and an assortment of healthy spices. It is very good due to its heat resistant properties and it keeps the body cool during the extreme summer heat. It quenches thirst and make up for the excessive loss of sodium chloride and iron during excessive sweating. It is very beneficial in the treatment of Gastrointestinal disorders is considered as a tonic against anemia and dysentery.
It is generally yellow or light green in color depending on the variety of the Mango used and also the spices used. Mint leaves are used in making this healthy drink which adds to its green color also in addition to enhance the health benefits.
Ingredients:
Raw Mango – 500 Gms
Ginger – 1 ½ inches
Sugar – 1 ½ cup (240 ml) (Adjust depending on the sourness of Mango.)
Mint Leaves – ½ cup
Black Pepper Powder – ½ tsp
Roasted Cumin Powder – 1 tsp
Salt – 1 tsp
Black Salt – 1 tsp
Cardamom Powder (Green Elaichi Powder) – 1 tsp
Method:
Rinse the Mangoes and wipe them clean with a cloth. Peel the skin of the Mangoes and discard. Chop the Mangoes into small pieces.
Take the Mango pieces in a pan. Add just enough water to cover the mango pieces. Add the washed and cleaned Ginger pieces. Cook them in medium flame till the Mangoes become soft and mushy. It takes about 8 to 10 minutes for the Mangoes to get cooked soft and mushy. Allow them to cool down fully.
Once it cools, blend it along with Mint Leaves, Black Pepper Powder, Cumin Powder, Salt, Black Salt and the Cardamom Powder. Blend them to a very fine paste without adding any water.
Take 1 ½ cup of Sugar in a pan. Add 1 ½ cup of water. Start heating them. Let the Sugar melts fully. Add the Mango Pulp to this Sugar syrup. Cook in low flame till it thickens to a form a one string consistency. Keep stirring in between while cooking. It takes about 10 to 15 minutes to achieve this consistency.
Switch off the flame. When it is medium hot, fill it in sterilized glass bottles or jars. Allow it to cool. And once it cools down, close with lids and store in the refrigerator. The Aam Panna Concentrate is ready.
For serving, take 2 tbsp of this concentrate in a serving glass. Add few ice cubes to it. Fill the glass with chilled water. Stir well and serve with mint leaves.
Notes:
- You can adjust the Sugar depending on the tanginess of the Mangoes.
- You can also substitute Sugar with Jaggery or Jaggery Powder.
- You can also store this Aam Panna Concentrate in room temperate. Once you have completed making the concentrate, add a tsp of Sodium Benzoate to the concentrate, dissolve it well in the concentrate and store in sterile bottles or jars.
- Use dry spoons whenever you want to remove the concentrate from the bottle or jar and close the bottle / jar tightly.
