Radish is a low calorie vegetable which contains Vitamin C and minerals Phosphorous and Zinc. It controls Diabetes and Blood Pressure. It prevents dehydration. It is usually eaten pickled, but this version of stir fried radish makes one delicious dish!
Ingredients
Radish (Mooli /Mullangi) – 2
Chilli Powder – ¾ tsp
Coriander (Dhania) Powder – 1 tsp
Turmeric (Haldi) Powder – 1 pinch
Amchur Powder – ½ tsp or Lemon Juice – ½ tsp
Sugar – ¼ tsp
Salt to taste
For Tempering
Oil – 1 tbsp
Rai/ Mustard seeds – ½ tsp
Jeera (Cumin Seed) – 1 tsp
Ginger (finely chopped) – 1 tsp
Preparation:
Peel off the skin of Radish. Wash and chop it finely.
The radish leaves can be used as well. Use the tender leaves. Remove the thick veins from the leaves, wash the leaves and chop them finely.
Heat Oil in a pan and add Mustard seeds. Allow to crackle, add Cumin seeds. When it splutters, add Ginger. Sauté for a minute.
Add the finely chopped Radish and the leaves. Mix well. Add 3 to 4 tbsp of water, cover and cook for five minutes on medium heat.
Add Salt, Chilli Powder, Turmeric Powder, Amchur Powder, Coriander Powder and Sugar. Mix well, cover with the lid and cook for 5 minutes on low heat.
Stir it occasionally. Add few teaspoons of water if required. Stir fry till Radish gets to a soft consistency.
Done!
Goes well with Rice or Roti.
Note:
If Lemon Juice is used in place of Amchur Powder, add the lemon juice after the Stir Fried Radish is removed to the serving bowl and mix well.
