I had posted a few recipe with Radish as the main ingredient like radish lentil soup, radish thuvaiyal and chutney, radish greens stir fry etc. Let us see one more recipe using Radish as the main ingredient. We will make a gravy to go with Rice, Chappati etc.
Ingredients:
Oil – 1 ½ tbsp (Gingelly Oil preferred)
Mustard Seed – 1 tsp
Urad Dal – 1 tsp
Curry Leaves – from 1 twig
Red Onion – 1 (chopped)
Tomato Large – 1 (finely chopped)
Green Chilli – 1 (cut into half)
Red Chilli Powder – 1 tsp
Coriander Seed Powder – 1 tbsp
Turmeric Powder – 1 pinch
Asafoetida – 1 pinch
Salt to taste
Tamarind – small lemon size soaked in ½ cup of water
Jaggery – 1 tsp
Rice Flour – 2 tsp
Radish (Mullangi/Muli) – cut into pieces
Method:
Heat the Oil in a pan. Add Mustard Seeds and allow it to crackle. Add Urad Dal and Curry Leaves. Stir fry for a few seconds.
Add the chopped Onion and stir fry for a minute in medium flame.
Add the finely chopped Tomato. Stir cook for a couple of minutes.
Add the Red Chilli Powder, Coriander Seed Powder, Turmeric Powder, Asafoetida and Salt.
Continue cooking till the gravy becomes thick.
Add the Radish slices and a cup of water.
Allow the gravy to come to a boil. Cover the pan and simmer for 6 to 8 minutes in medium flame.
Extract the Tamarind Juice and add to the gravy.
Mix the rice flour in quarter cup of water without any lump and add to the gravy. Add Jaggery.
Stir well till the gravy starts boiling. Stirring is required to avoid the rice flour forming a lump. Adjust Salt. Continue cooking for another 3 to 4 minutes.
Transfer this spicy and tangy gravy to a serving bowl.
