The Red/Purple Cabbage is a low calorie vegetable and it has lots of health benefits. I have used this vegetable in a Kerala style recipe with Coconut Oil and it has turned out to be a very tasty recipe.
Ingredients
To grind:
Red Chillies – 2
Onion – ½ (or Shellots – 8)
Cumin Seed – ¾ tsp
Grated Coconut – ½ cup
Other Ingredients:
Coconut Oil – 3 tsp
Mustard Seed – ½ tsp
Cumin Seed – ½ tsp
Turmeric Powder – one pinch
Curry Leaves – from 1 twig
Salt to taste
Finely Chopped Purple Cabbage – 1 cup
Method
Crush Red Chillies, Onion, Cumin Seed and Grated Coconut together to a coarse powder without adding water.
Heat the Oil in pan. Add Mustard Seed and Cumin Seed allow them to crackle. Add Curry leaves.
In another 30 seconds, add the crushed powder. Mix and stir cook for a minute.
Add the finely chopped Purple Cabbage, Turmeric Powder and Salt. Mix well. Cover the pan with a lid. Simmer in low flame for 4 to 5 minutes stirring in between. Stir cook till the cabbage become dry (but not burned).
Transfer to a serving bowl.
It goes well as side dish with Rice, Roti etc.
