Ridge Gourd is a dark green, ridged and tapering pretty vegetable. It has white pulp with white seeds embedded in spongy flesh. It is also commonly called as Turai or Turia. It has some good health benefits – it helps in weight loss, it improves digestion and it has anti diabetic properties also. It is very high in dietary fibers, water content is very high in this vegetable, it has very low saturated fat and cholesterol. It helps in purifying blood, it helps in curing jaundice and we can go on talking about its health benefits. Let us see a very very simple and easy to make dish using this healthy vegetable. It would be a very tasty dish which will goes very well with Sambar Rice, Rasam Rice etc and can be relished with Roti and Chapatti also.
Ingredients:
Ridge Gourd – 500 Gms
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urda Dal – 1 tsp
Green Chillies – 4 (slitted)
Garlic Pods – 5 (crushed)
Curry Leaves – from 1 s[rig
Onion -1 (finely chopped)
Grated Coconut – 4 tbsp
Salt – to suit one’s taste
Method:
Wash and wipe the Ridge Gourd. Peel off the skin using a peeler. Cut them into ½ inch long pieces.
Heat the Oil in a pan. Add Mustard Seeds, Urad Dal. When the Mustard Seeds start crackling, add the Green Chillies and crushed Garlic. Sauté them a minute. Add Curry Leaves and Onion. Cook them till the Onion turns translucent.
Add the Ridge Gourd and Salt.. Simmer for 5 to 6 minutes in low medium flame till the vegetables become soft. There is no need to add water. Cook it dry only.
Add the grated Coconut. Mix well. The tasty Peerkangai Poriyal is ready.
Note:
Select the Tender Ridge Gourd only. The Ridge Gourd should be deep green in color. If you prick it with your nail, it must be heavy and firm. These tender Ridge Gourds will have the very tender seeds.
Also, pinch off a small bit of the Ridge Gourd and taste it raw. If it tastes bitter, avoid using those Gourds. They are not good for making any dish.
