A quick rice dish for days when you are in a rush. Or need to make something quick to pack for lunch. It has peas which is very high in protein, so it is a wholesome dish.
A bowl of piping hot rice with cold raita is just bliss!
Ingredients:
Rice: 1 cup
Green peas: ¾ cup
For tempering:
Ghee: 1 tbsp
Fennel seeds/saunf: ½ tsp
Green elaichi/cardamom: 4
Cinnamon: 2
Bay leaves: 2
Star anise: 2
Green chilly: 1 finely chopped
Cilantro leaves: 2 tbsp
Method:
Wash and rinse rice and strain it.
Heat ghee in a pressure cooker. Add ghee and when hot, add the rest of the ingredients listed under tempering and sauté.
Add rice and sauté for a couple of minutes or until it becomes dry. Add the green peas, salt, water and mix.
Cook until the rice absorbs 75% of the water. Close the lid and cook till the steam gathers. Lower the flame and cook for few mins. Sprinkle with cilantro and serve.
Done!
Goes well with raita.
