During the Navaratri Festival, many offerings are prepared for offering to the deity during the Pooja. This Peanut Sundal is one such offering especially in the southern region of India. It is a high protein dish which can be served as snack with tea as well.
Ingredients
Peanut (dry) – 1 cup
Coconut – 2 tbsp
Salt to taste
To Temper
Oil – 2 tsp
Mustard – 1 tsp
Pepper Powder – 1/8 tsp
Urad Dal – 1 tsp
Green Chilli – 2
Curry Leaves – 1 spring
Asafoetida – 1 pinch
Salt to taste
Method
Soak the Peanuts in water for an hour. Drain the water. Pressure cook the peanuts for 3 to 4 whistle with ½ cup of water. Drain the water away and keep aside the peanuts.
Heat the Oil in a pan. Add Mustard and Urad Dal.
Once it splatters, add all other items from the “To Temper” column.
Stir a little. Add the Boiled Peanut. Stir for a minute.
Add Coconut, mix well.
