I have posted a few fried rice recipes earlier – like Vegetable Fried Rice, Schezwan Fried Rice etc. See under the Indo Chinese Recipes if you have not seen them earlier. In line with those fried rice recipes, we will see how to make Paneer Fried Rice here. This dish uses varieties of vegetables. Those who do not have a great liking for Cabbage or Carrot would love this dish even when it contains those vegetables. If you have leftover cooked rice in the fridge, you can make this Paneer Fried Rice in just a few minutes.
Ingredients:
Cooked Long Grain Rice – 250 Gms (1 cup)
Oil – 3 tbsp + 1 tbsp
Finely chopped Garlic – 1 tbsp
Finely chopped Ginger – 1 tsp
Green Chilli – 2 (Finely chopped)
Onion – 1 (Finely chopped)
Finely chopped Cabbage – ½ cup
Finely chopped Carrot – ½ cup
Finely chopped Capsicum – ½ cup
Finely chopped Spring Onion Greens – 3 tbsp
Grated Paneer – 100 Gms
Dark Soya Sauce – 2 to 3 tsp
Red Chilli Sauce – 1 ½ to 2 tbsp
Salt to taste
Pepper Powder – ¼ tsp
For Paneer Marination:
Paneer – 200 Gms (cut into small cubes)
Dark Soya Sauce – ½ tsp
Red Chilli Sauce – 1 tsp
Corn Flour Or Rice Flour – 1 tbsp
All Purpose Flour (Maida) – 1 tbsp
Spring Onion for Garnishing
Method:
Take the Paneer Cubes in a bowl. Add all the other ingredients under “For Paneer Marination” one by one and combine them well.
Cover and allow it to rest for 15 minutes.
Heat 1 tbsp of Oil in a non-stick pan. Add the marinated Paneer. Cook it for 1 to 2 minutes stirring occasionally. Keep it aside.
Ingredients for the fried rice
Heat 3 tbsp of Oil in a broad non-stick pan. Add Garlic, Ginger, Green Chillies and the Onion. Stir fry them in medium flame for 30 to 40 seconds.
Add the Carrots. Stir cook for a minute.
Now add the Cabbage. Cook for 30 to 40 seconds.
Add Capsicum and Spring Onion. Stir cook for a few seconds.
Add Salt and Pepper and stir them well.
Add the Grated Paneer. Mix well.
Add the boiled Rice, Chilli Sauce, Soya Sauce, Vinegar and Salt. Mix gently. Cook over medium flame for 2 to 3 minutes stirring occasionally.
Finally add the marinated cooked Paneer.
Mix gently. Switch off the flame.
Serve hot garnished with Spring Onion Greens.
Note:
I used Green and Red Capsicum. You can use Capsicum of your choice.
Adjust spiciness also to suit your taste.
