Jackfruit Season is at the door now. We will get plenty of Jackfruits and Mangoes in the market in another few days if they have not showing the presence already. And when we enjoy the ripe Jackfruits, we tend to throw away the Jackfruit Seeds. But, we should know that the seeds are a very rich source of Vitamin C, Potassium, dietary fiber and many other minerals. Jackfruit Seeds help in digestion, combat anemia, boost eye vision, reduce the chance of blood clot, helps in keeping wrinkle free skin and helps in hair growth also. So, let us not waste the healthy seeds. We can make varieties of tasty delicious dishes with the Jackfruit Seeds. And I shall come with more recipes using Palakottai. Here we are going to see how to make tasty delicious Kootu (curry) with Jackfruit Seeds. Jackfruit Seeds do not have a very special taste on own. But, it takes the taste of the gravy which we make with these seeds and other vegetables. We will see here now how to make a tasty delicious Kootu (gravy) with these seeds here.
Ingredients:
Jackfruit Seeds (Palakottai) – 1 cup
Yellow Lentil (Moong Dal) – 1/3 cup
Drumstick – 2 Nos (Cut into 2 to 3 inch long pieces)
Turmeric Powder – 1/8 tsp
Salt to taste
To Grind:
Grated Coconut – 4 tbsp
Fennel Seeds (Saunf) – ½ tsp
Chilli Powder – ¾ tsp
For Tempering:
Oil – 1 tbsp
Mustard Seeds – ¾ tsp
White Lentil (Urad Dal) – 1 tsp
Finely chopped Onion – 3 tbsp
Curry Laves – from 2 sprigs
Method:
The Jackfruit Seeds must be dry. Microwave them for 30 to 40 seconds. This helps in cutting the seeds and peeling the skin. Cut the seeds vertically into two and peel outer white skins. If you can peel the red inner skin also easily, do remove them. (You can leave the red skin since it is edible). Cut the seeds into pieces. Keep aside.
Wash and rinse the Moong Dal. Soak the Moong Dal in ½ cup of water for 15 minutes.
In the meanwhile, blend the ingredients in the “To Grind” column to a coarse texture. Keep aside.
Heat the Oil in a pan. Add Mustard Seeds. Once they crackle, add Urad Dal and roast them for 30 seconds. Add finely chopped Onion and Curry Leaves. Sauté till the Onion turns translucent.
Add the Drum Stick pieces. Stir them well. Add around 1 ½ cups of water. Add Salt and Turmeric powder. Simmer them covered with a lid till the vegetables are 75 percent done.
Add the Jackfruit Seeds which we have kept aside. Add the gorund Coconut mixture. Mix well and simmer for 4 to 5 minutes covered with a lid in lower medium flame.
Add the cooked Dal. Simmer further 4 to 5 minutes. The tasty delicious Palakottai Murungai Kai Kootu is ready. Serve with steamed Rice or Chappati or Roti etc
