We had earlier seen a few recipes with Jack Fruit Seeds. Jackfruit has lot many health benefits. I had mentioned earlier also that the seeds do help in combating anemia, helping to improve vision, improving digestion. It helps in building muscles, improving skin glow, helping in hair growth etc. And I do not throw away the seeds after eating the Jack Fruit. I make very tasty dishes using these seeds. Let us see one more recipe using this Jackfruit Seeds.
Ingredients:
Peeled and chopped Palakottai (Jackfruit Seeds) – ¾ cup
Coconut Oil – 1 tbsp
Cumin Seeds – 1 tsp
Green Chillies – 2 (Slitted)
Onion – 1 (Finely chopped)
Tomatoes – 2 (finely chopped)
Turmeric Powder – 1 pinch
Finely chopped Cilantro – 2 tbsp
Salt – to suit taste
For Kurma Masala:
Oil – 1 tsp
Cinnamon Stick – 1 small piece
Green Cardamom – 2
Green Chillies – 3
Ginger – 1 inch
Garlic – 5 pods
Onion – 1 (chopped)
Poppy Seeds – 1 tsp
Roasted Gram – 1 tbsp
Grated Coconut – 4 tbsp
Method:
Peel and chop the jackfruit seeds into pieces. Cook the Jackfruit Seeds in a pressure cooker for one or two whistle with ½ cup of water and ¼ tsp of Salt. After it cools, strain the water. Keep aside.
In the meanwhile, prepare the Masala for the Kurma. Heat the Oil in pan. Add Cinnamon Stick, Green Cardamom, Green Chillies, Onion, Ginger and Garlic. Cook them with a little Salt till the Onion turn translucent. Add poppy Seeds, roasted Gram and grated Coconut. Mix well. Switch off the flame. Stir for a few seconds. Allow it to cool. Once it cools down to room temperature, grind them together to a fine paste with required water.
Heat the Oil in the same pan. Add Cumin Seeds. When they sizzle, add Onion and Green Chillies. Stir cook till the Onion turns translucent. Add the Tomatoes. Mix well. Add Turmeric Powder and 2 to 3 tbsp of water. Simmer for 3 to 4 minutes covered with a lid in medium flame. Mash them with a ladle. Add the Kurma Masala and cook for 2 to 3 minutes.
Add a cup of water. Adjust Salt. When the gravy comes to a boil, add the boiled Jackfruit Seeds. Close the pan with a lid and simmer for 4 to 5 minutes over low medium flame. Transfer to a serving bowl. Garnish with the finely chopped Cilantro.
Serve this flavorful tasty korma with Roti, Chapatti, Idly, Dosa, Steamed Rice etc.
Note:
While chopping the Jack Fruit Seeds, ensure that the Seeds are dry. Else the knife may slip and injure the fingers.
Cut each Seed vertically, not horizontally. It helps to peel the skin easily.
Since the seeds are smooth, the knife may slip. Microwave the Seeds for 30 seconds just before chopping so that you can cut them easily.
