I had prepared stir fried Brinjal many a time. I added roasted and crushed Peanuts and Sesame this time and the dish turned out to be a favorite among the family. You can serve this with Roti, Rice and Methi Paratha.
Ingredients:
Oil – 2 tbsp
Brinjal – 250 Gms
Sliced Tomato – 1
Mustard Seed – 1 tsp
Cumin Seed – ½ tsp
Curry Leaves – from 1 twig
Turmeric Powder – 1/8 tsp
Coriander Seed Powder – 1 tsp
Red Chilli Powder – ½ tsp
Roasted Peanut – 2 tbsp
Roasted Sesame – 1 tbsp
Chopped Coriander Leaves – 1 tbsp
Method
Cut the Brinjal into medium thick slices and immerse them in a bowl of water.
Grind the Roasted Peanuts and Sesame into a coarse powder and keep aside.
Heat the Oil in a pan. Add Mustard Seeds and Cumin Seeds and allow them to crackle. Add Curry Leaves.
Add the Brinjals, Salt and Turmeric Powder.
Stir fry them in medium flame till the Brinjals are cooked to 75 percent.
Add the sliced Tomato, Red Chilli Powder and the Coriander Powder. Mix well. Cover the pan and simmer in low flame for 3 to 4 minutes stirring in between.
Add the Peanut and Sesame Powder and Coriander Leaves.
Mix well, stir fry for a minute.
Transfer to a serving bowl.
Serve with Roti, Rice or Methi Paratha.
