Ingredients
Mushrooms sliced: 300 g
Spinach/Palak: 11/2 cup tightly packed (or 1 bunch)
Potato cooked and crumbled: 1
Pepper pd: ¾ tsp
Chili flakes: ½ tsp
Ketchup: 2 tsp
Mayonnaise: 1 tbsp
Grated cheese: 4 tbsp
Bread sliced: 4
Butter: 1 tsp
Mixed herbs: ½ tsp (optional)
Salt to taste
Method
Heat oil in a pan. Add mushrooms and sauté it till water evaporates.
Add spinach and sauté for few secs.
Add ½ tsp pepper pd, mixed herbs, chili flakes and salt. Cook for 4-5 mins.
Add the crumbled/mashed potatoes and mix well. Stuffing is ready.
In a separate bowl, add mayonnaise, ¼ tsp pepper pd and ketchup. Mix.
Apply a thin layer of butter to one side of all the bread slices. Apply the mayonnaise mixture to the other side of the bread. Divide the cooked mushroom mixture evenly onto two slices of bread. Sprinkle the grated cheese on top.
Top with the other slices of bread. Toast in a sandwich maker or on the stove top (using a pan set to medium heat).
Done!
This sandwich works great for breakfasts or for your lunch box.
