Couscous Pulav is a healthy dish for those who follow diet control to shed down their weight. It is nothing but a form of wheat like Semolina, Dalia and Bulgar Wheat (parboiled wheat) . We can make different dishes with this Couscous. This is my first recipe using Couscous.
Ingredients:
Couscous – 1 cup (Soaked in 2 cups of hot water for 30 minutes)
Ghee – 1 tsp + 1 tsp
Cumin Seeds – 1 tsp
Bay Leaf – 1
Fresh Chillies – 2
Onion – 1 (Finely Chopped)
Ginger Garlic Paste – ½ tsp
Finely Chopped Capsicum – ¼ cup
Finely Chopped Carrot (parboiled) – ¼ cup
Fresh or Frozen Green Peas (parboiled) – ¼ cup
Turmeric Powder – ¼ tsp
Salt – to suit one’s taste
Water – 3 to 4 tbsp
Lemon Juice ½ tsp
Cilantro (Coriander Leaves) – 2 tbsp
Method:
Heat the Oil in a pan. Add Cumin Seeds and Nay Leaf. When the Cumin Seeds start crackling, add the chopped Chillies and Onion. Sauté those with a pinch of Salt in medium flame till the Onion turns light brown. Add the Ginger Garlic paste. Sauté them for 40 seconds.
Add the Capsicum and cook for 2 to 3 minutes. Add the Parboiled Carrot and Green Peas. Sauté for a minute. Add Turmeric Powder. Mix and simmer for 2 to 3 minutes in low flame covered with a lid.
Drain the soaked Couscous and add to the above. Add required Salt. Mix well. Sprinkle 3 to 4 tbsp of water. Mix well. Simmer for 4 to 5 minutes covered with a lid in medium flame stirring in between.
Add Lemon Juice and Cilantro. Mix well. Transfer to a serving bowl.
Serve with Raita or pickle.
