Aloo and Fenugreek leaves (methi) is a great combination to make very tasty and flavorful Paratha. As you may know, Fenugreek is loaded with a plethora of essential nutrients making this a very nutritious meal. Start your day with this Paratha to have a fulfilling day.
Ingredients:
For Stuffing:
Potatoes – (boiled and crumbled)
Green Chillies – 3 (finely chopped)
Grated Ginger – 1 tsp
Finely Chopped Onion – 3 tbsp
Finely Chopped Cilantro – 4 tbsp
Salt – to suit one’s taste
Turmeric Powder – 1 pinch
Red Chilli Flakes – ½ tsp
Chat Masala – ½ tsp
For Dough:
Methi (Fenugreek Leaves) – 1 ½ cup
Whole Wheat Atta – 2 cups
Salt – to suit taste
Oil – 1tbsp
Carom Seed – 1 tsp
Method:
Wash the Methi Leaves thoroughly under running water. Chop them finely.
Take these Methi Leaves in bowl. Add whole Wheat Flour, Salt and Oil. Mix them well and make smooth dough with required water. Allow the dough to rest for 30 minutes.
In the meanwhile, we can make the Potato stuffing for the Paratha.
Take the boiled and crumbled potato in a mixing bowl. Add all other ingredients given under ‘for stuffing’. Mix then well.
From the dough which we have allowed to rest for 30 minutes, make medium sized balls. Take a ball and roll it into 5 to 6 inch diameter disk. In the center, place 2 to 2 ½ tbsp of the Potato and Methi stuffing. Fold and seal the edges. Roll it again into a medium thick round.
In a hot Tawa, sprinkle Oil or Ghee. Roast both the sides of the Paratha in it till both sides turn golden brown. Make the remaining Parathas in the same manner.
Serve the Parathas with Raita, Chutney, thick Curd, Pickle etc.
