Sherbet is a drink prepared from fresh fruits or flower petals. It is basically a Indian sub continental drink. It is very popular in the Kerala region especially Kochi. Sherbet is prepared using one or more of the following: basil seeds, rose water, fresh rose petals, sandalwood, hibiscus, lemon, orange, mango, pineapple, water melon etc. We will see how to make a Sherbet with water melon here. Since the process ends with shaking all the ingredients together in a closed glass or bottle, it attains the name Kulukki (meaning shaking). It is a very refreshing drink during the summer months.
Ingredients:
Deseeded Water Melon Cubes – 2 cups
Cardamom (Elaichi) Powder – 1 pinch
Grated Ginger – ½ tsp
Lemon Juice – 2 tbsp
Rose Syrup – 1 tbsp
Sugar – 2 tbsp
Green Chilli – ½
Sabja (Basil) Seeds – 1 tsp
Water Melon Seeds – 3 tbsp
Method:
Soak the Basil Seeds in ¼ cup of water for 10 minutes. And Keep aside.
Take the Water Melon Cubes, Elaichi Powder and Grated Ginger in a blender and blend it well till it becomes very smooth.
Pour the blended juice in a shaker or a bottle which can be closed with a lid. Add Rose Syrup. ½ green Chilli, Lemon Juice, Water Melon Chunks and Basil Seeds. If required, add Ice Cubes also.
Close it with the lid and shake well. The very refreshing Kulukki Sarbath is ready.
Pour it in a serving glass and serve immediately.
