Kera means Coconut and Alam means land. So, the land with plenty of Coconut Trees is called Keralam – Kerala in short. It is estimated that 65 percent of Coconut production in India is from Kerala. (92 percent is from Kerala and its surrounding south Indian States). So, when we talk about Kerala style recipe, it is bound to have Coconut as one of the main ingredients. We are going to see one such Kerala Style Recipe here. It is a very, very simple to make dish using Cabbage. We had already seen the health benefits of Cabbage. It is rich in Vitamin K, Manganese, Calcium, Potassium and other nutrients. It is a leafy vegetable and so, has high content of fiber. This multi layered Vegetable comes in different colors – green, purple, white etc. What we use in this recipe is the green variety. But, we can use any of this variety for this recipe.
Ingredients:
Cabbage -250 Gms
Turmeric Powder – 1 pinch
Grated Coconut – 1/3 cup
Salt – to suit one’s taste
Curry Leaves – from 1 twig
Mustard Seeds – ½ tsp
Coconut Oil – 2 tbsp
Red Chillies – 2 (Broken)
To Grind:
Green Chillies – 3
Garlic Pods – 1
Shallots (Small Onion) – 8
Cumin Seeds – 1 tsp
Curry Leaves – from 1 sprig
Method:
Shred of chop the Cabbage finely.
Crush or bound the ingredients given in the “To Grind” column coarsely. Add to the finely chopped Cabbage.
Add Salt, Turmeric and Grated Coconut and mix well with hand.
Heat the Oil in a pan. Crackle the Mustard Seeds. Roast the Red Chilies in it.
Now, add the Cabbage mix which we have prepared. Stir cook for 2 minutes and then simmer for 6 to 8 minutes covered with a lid in low medium flame. Do stir it occasionally while it is simmering. We can cook it crunchy or soft depending on our preference.
The tasty Kerala Style Cabbage Thoran is ready. Transfer to a serving bowl.
It can be served with Rasam Rice or Sambar Rice or as a side dish with Chapatti also.
