We have already seen few recipes prepared with Purple cabbage and the health benefits of this vegetable. To recap, Purple Cabbage is also known as Red Cabbage. It is a vegetable loaded with high nutrients and vitamins compared to the ordinary Cabbage (dietary fiber, vitamin C, Carbohydrates, Vitamin K, Calcium and Potassium etc.). The color changes from region to region depending on the soil conditions – In acidic soils, the leaves grow more reddish, and in neutral soils they will grow purple, while an alkaline soil will produce rather greenish-yellow colored cabbages.
When Cabbage is cooked, it loses many of its valuable minerals and nutrients. But, the antioxidants are there to help even in cooked state. It is always better not to boil them. We will see how to make a great tasty curry of this Purple Cabbage in the Karnataka Style.
Ingredients:
Purple Cabbage – 200 Gms (finely chopped)
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urad Dal – 1 tbsp
Channa Dal – 1 tbsp
Onion – 1 (finely sliced)
Garlic – 6 pods (finely chopped)
Ginger – ½ inch long piece (Grated)
Curry Leaves – from 1 twig
Salt – to suit one’s taste
To grind:
Grated Coconut – ¼ cup
Dried Red Chilli – 2 (or to suit taste)
Mustard Seeds – ½ tsp
Method:
Heat the Oil in a pan. Add Mustard Seeds, Urad Dal and Channa Dal. When the Mustard Seeds crackle and the Dal turn pink, add the sliced Onion, chopped Garlic, grated Ginger and Curry Leaves. Cook till the Onion turns translucent.
Add the finely chopped Purple Cabbage and Salt. Sprinkle 2 to 3 tbsp of water. Mix well. Simmer for 4 to 5 minutes in low medium flame stirring in between.
Grind the Grated Coconut, Dried Red Chilli and Mustard Seeds together to a coarse paste without adding any water.
Add the ground paste to the cabbage mixture. Mix well. Simmer for 2 minutes.
The healthy and tasty Purple Cabbage Palya is ready to be served with Sambar Rice etc.
