Kandha Poha is a popular breakfast dish in the Maharashtra region in India. It is a very simple, tasty dish.
Ingredients
Flattened Rice (Rice Flakes / Jada Poha) – 1 cup
Oil – 2 tbsp
Peanut (shengdhana) – 1 tbsp
Onion (Medium sized) – 2 Nos (finely chopped)
Green Chilli – 2 (finely chopped)
Curry Leaves – 1 strand
Turmeric (Haldi) Powder – 1/8 tsp
Salt to taste
Cilantro (Dhania Leaves) – 2 tbsp (finely chopped)
Grated Coconut – 2 tbsp
Method
Wash the Poha in water and strain it. Leave it in the strainer for 15 to 20 minutes so that all the water strains away.
Heat 1 tsp of Oil in a pan. Add Peanuts and roast them crispy in medium flame. Transfer the peanuts to a plate or a bowl.
In the same pan, add the remaining oil. When it becomes hot, add Onion, Green Chillies and Curry Leaves.
Sauté those till the Onion become translucent. Add Poha, Salt, Haldi Powder and Dhania leaves.
Mix well till everything combines well. Cover with a lid and simmer for 3 to 4 minutes stirring in between.
Add the grated Coconut and the fried Peanuts and sauté for a few couple of minutes.
Done!
Serve with coffee / tea 🙂
