I had posted an Idli recipe earlier with vegetables and added flavor with tempering. We will see here another Idli variation which is very simple and can be called a fast food variety of Idli. It does not require grinding and fermenting like the regular Idli but tastes as good as the regular Idli.
Ingredients:
Sooji / Fine Rawa / Semolina – 2 cup
Curd (Yogurt) – 1 cup (smoothened)
Eno – ¾ tsp or Baking Soda – ½ tsp
Water – as required
Salt – to suit taste
Oil – for greasing the Idli molds
Method:
Take the Semolina in a mixing bowl.
Add Curd. ½ cup of water abd Salt. Mix then well. Keep aside for 15 to 20 minutes.
If the batter becomes thick after the above resting period, add water and mix to make it to a medium consistency.
The batter should not be too thin or too thick.
Heat the water in the Idli cooker or a vessel or electric cooker. Grease the Idli molds with Oil.
Add Eno or Baking Soda to the batter and mix well.
Pour the Idli batter to the cavities of the Idli mold.
Steam them for 10 to 12 minutes in medium flame with the lid closed. Open the lid and take out the Idli molds. Dip a spoon in warm water and take out the Idlis from the mold with this spoon.
Serve hot with Sambar or Chutney of your choice
