Parathas come in many variations. I have posted a few varieties earlier. This Paratha which we are going to make is Palak Paneer Paratha. I had cooked Palak Paneer Gravy. And that dish inspired me to try out this stuffed Paratha. It is a healthy and tasty dish.
Ingredients:
For Spinach Paste:
Palak/Spinach – 1 medium sized bunch
Ginger – ½ inch
Green Chilli – 1
Garlic Cloves – 2
Water – as required
For the Dough:
Wheat Flour – 1 ½ cups
Salt to taste
Oil – 2 tbsp
Water as required
For Stuffing:
Paneer (Cottage Cheese) – 200 Gms (Grated Or Crumpled)
Oil – 1 tsp
Cumin Seeds – ½ tsp
Onion (medium sized) – 1 (finely chopped)
Grated Ginger – 1 tsp
Green Chilli – 2 (finely chopped)
Dry Mango Powder (Amchur Powder) – ¼ tsp
Garam Masala – ½ tsp
Chat Masala – ½ tsp
Finely Chopped Coriander Leaves – 2 tbsp
Salt to taste
Method:
Grind Spinach, Green Chilli, Ginger and Garlic – all together- to a fine paste with very little water.
Take the whole wheat flour in a mixing bowl. Add Salt, Oil and Spinach Puree.
Combine everything well. Make medium soft dough. If necessary, use very little water. Apply some oil on the surface of the dough and allow it to rest for some time.
In the meanwhile, start preparing the stuffing.
Grate the paneer.
Heat the Oil in a pan. Add the Cumin Seeds and allow it to crackle. Add the chopped Onion and grated Ginger.
Stir cook till the Onion turns translucent. Allow it to cool down.
Now, add this to the grated Paneer and mix well. Add the Chaat Masala, Amchur Powder, Garam Masala, finely chopped Coriander Leaves and Salt. Combine them well.
Divide this mix into six equal portions. Make each portion into a smooth batter and flatten with your palm. This is the stuffing.
Roll Parathas from the wheat dough which we have already prepared and allowed to rest. Roll into 4 inch round Parathas using rolling pin and board.
Keep one portion of the Paneer stuffing in the center of the Paratha.
Gather the edges. Pinch and seal the sides.
Flatten it by pressing lightly. Now, roll it into Parathas dusted with flour into six inch round circles.
Place the Paratha in a flat skillet or dosa pan. Cook it in medium flame for 30 to 40 seconds till few bubbles start appearing on the top.
Flip the Paratha and cook the other side for 40 to 40 seconds in medium flame. Apply some Oil or Ghee and flip it.
Press lightly and cook.
Once both the sides are cooked, transfer the Paratha to a plate.
These Parathas can be served without any side dish. But, if you prefer, you can serve it with plain Yogurt and/ or a pickle.
