Amla (Indian Goose Berry ) is a rich source of Vitamin. It has a sour and bitter taste which is not liked by some. But, there are varieties of preparations which make this nutritious berry delicious like pickles, candy, juice etc.
Ingredients:
Amla (Goose Berry) – 500 Gms (10 to 12 big sized Amlas)
Ghee – 1 tbsp
Sugar – ¾ cup
Saffron – few strands (Optional)
Lemon Juice – 1 tsp
Lemon Zest – ½ tsp (Grated)
Elaichi (Cardoman) Powder – ¼ tsp
Preparation –
Wash the Amla well.
Boil 2 cups of water in a vessel. Add the Goose Berries carefully taking care not to splash the boiling water and cover with a lid. Cook on low to medium heat till the Goose Berries become tender. It takes 10 to 12 minutes. Drain the water completely and allow the Goose Berry to cool.
Cut them into two, remove the seeds, mash with a Masher or a ladle.
Heat Ghee in a pan. Add the crushed Goose Berries, Sugar and cook on a medium heat. Stir in between.
Add Saffron, Elaichi and cook till all the water evaporates and the Goose Berries attain a jam consistency.
Add the Lemon Juice and Lemon Zest and cook for 1 more minute. Remove from the flame and allow to cool well.
Done!
Store in a sterilized air tight container. It can be stored for 15 to 20 days. If stored in a refrigerator, it is good for use up to 2 to 3 months.
