This Garbanzo Salad with Cucumbers and Carrots can be had as a salad or as a starter. It can also be served as a midday snack. The ingredients are definitely very nutritious and it is an easy to make Salad. So win-win!
Ingredients
Boiled Green Garbanzo – ½ cup (white chickpeas can be used if green beans are not available
Finely Grated Carrot – ¼ cup
Finely chopped Cucumber – ¼ cup
Finely chopped Parsley – 3 tbsp
For Dressing:
Olive Oil – 2 tsp
Lemon Juice – 1 tsp
Honey – 1 tsp
Apple Cider Vinegar – ½ tsp
Roasted Cinnamon Powder – ¼ tsp
Freshly Ground Pepper Powder – one pinch
Method:
Take all the ingredients under the “For Dressing” column in a small bowl. Mix them well.
Take all the other ingredients in a mixing bowl. Add the above vinaigrette to it. Stir well. (Adjust the quantity of the vinaigrette to suit your taste.)
Serve cold.
